I hope you all had a great holiday season. I have had an overwhelming response to my absence in blogging; sorry about that. I\u2019ve been so busy with many things I can\u2019t begin to list them. I didn\u2019t even have time to post pictures \u00a0on <a href=\"http:\/\/instagram.com\/thehighheelgourmet\/\" target=\"_blank\" rel=\"noopener\">my Instagram<\/a> or <a href=\"https:\/\/www.facebook.com\/HighHeelGourmet\" target=\"_blank\" rel=\"noopener\">my Facebook pages<\/a>.<\/p>\n<p>Anyhow, I will have to manage my time better so I can spare time to blog, which I love to do.<\/p>\n<p>Let\u2019s start the year with a simple dish. It\u2019s my main comfort food, actually. Anytime I stress out and I want to eat Guay Tiew Rad Na. Really, it\u2019s that comforting. Rad Na isn\u2019t as popular among the foreigners compared to <a title=\"The Simple and Easy Pad See Ew!\" href=\"http:\/\/www.highheelgourmet.com\/2013\/04\/18\/pad-see-ew\/\" target=\"_blank\" rel=\"noopener\">Pad See Ew<\/a>\u00a0or <a title=\"Spicy Thai Stir-Fried Drunken Noodles : Pad Kee Mao\" href=\"http:\/\/www.highheelgourmet.com\/2013\/07\/27\/drunken-noodles\/\" target=\"_blank\" rel=\"noopener\">Pad Kee Mao<\/a>, even though the ingredients for Rad Na and Pad See Ew are quite similar.<\/p>\n<p>You might not have any idea what I\u2019m talking about. It\u2019s a dish mostly prepared with big, fat rice noodles, Sen Yai (see the description in my \u201c<a title=\"Thai Noodles for the Beginner, Episode I: All About Noodles\" href=\"http:\/\/www.highheelgourmet.com\/2014\/06\/14\/thai-noodles-for-the-beginner-episode-i-all-about-noodles\/\" target=\"_blank\" rel=\"noopener\">all about noodles\u201d post<\/a>) and has a thick brown gravy with meat\u2014either chicken, pork, beef or shrimp\u2014 and Chinese broccoli, called Gai Lan or Kai Lan, poured all over.<\/p>\n<p>This is a dish that doesn\u2019t photograph well at all. It\u2019s like the Canadian poutine. The official correct word is to be \u201cRad\u201d, not Lad, as announced by the Royal Institute of Thailand (\u0e23\u0e32\u0e0a\u0e1a\u0e31\u0e13\u0e11\u0e34\u0e15\u0e22\u0e2a\u0e16\u0e32\u0e19). So, I will be using only the correct word here.<\/p>\n<p>The Confusepedia, that popular online user-generated encyclopedia which ANYONE can add their knowledge or ignorance as they wish, has put a spin to the word by listing this dish as \u201cRat Na\u201d\u2026Ewwwwww\u2026gross beyond belief, isn\u2019t it? Even more ridiculous is they show \u201cRat na\u2026often pronounced lat na as many Thais substitute the r for an l&#8230;&#8221; My recommendation is if you don\u2019t really know what you are talking about, help people by withholding the urge to express, and at least keep your denseness to yourself, you know.<\/p>\n<p>This dish isn\u2019t originally Thai. It\u2019s one of the Thai-Chinese dishes. Now, the question is which tribe of the Chinese brought this dish to Thailand. Well, apparently the <a href=\"http:\/\/www.chinahistoryforum.com\/topic\/34292-origin-of-teochew-people\/\" target=\"_blank\" rel=\"noopener\">Teochew Chinese and the Cantonese<\/a>\u00a0have to fight over the origin of the dish in Thailand now. I\u2019m going to just sit back and watch. \ud83d\ude09<\/p>\n<p>There are many different styles to cooking the gravy. The original one, or the one my dad would call original (which meant something he ate when he was a child which only nearly a century ago) was the one that used Pak Choy\u2014Chinese Mustard greens or Chinese cabbage\u2014and bamboo shoots with extremely thick gravy, so thick you can use it as glue. Because they would serve it in a banana leaf, they had to make sure that the gravy couldn\u2019t leak out.<\/p>\n<p>I hate that \u201coriginal Rad Na\u201d but I love this one. I am not a big fan of bamboo shoots, and so not a big fan of extremely thick gravy, quite unappealing indeed. Then we have the Teochew style which used Gai Lan\u2014Chinese Broccoli\u2014with a dark fermented soybean called Tao Jiew Dam (Dam=black) and fish sauce. The gravy would be a nice deep brown color.<\/p>\n<p>I\u2019m not done yet. There are more. The Hong Kong style with \u00a0the clean-looking gravy with Gai Lan, and the gravy with oyster sauce and no fermented soy bean. You would be able to find this in the US at some Chinese restaurants. It will be listed as Chow Fun with gravy but sometimes they\u2019re using Bok Choy instead of Gai Lan.<\/p>\n<p>And the last kind that I like the most, the Thai style, which I was told is\u00a0Cantonese style. Just give me the recipe already!\u201d with me. The recipe is down below, don\u2019t worry. I just want to make sure that my readers would not be fooled by the info from the \u201cConfusepedia\u201d, alright?<\/p>\n<p>I\u2019m still not done describing it yet. The noodles used in Rad Na are not only the \u201c<a href=\"http:\/\/www.highheelgourmet.com\/2014\/06\/14\/thai-noodles-for-the-beginner-episode-i-all-about-noodles\/#senyai\" target=\"_blank\" rel=\"noopener\">Sen Yai<\/a>\u201d or the big fat rice noodles. There is <a href=\"http:\/\/www.highheelgourmet.com\/2014\/06\/14\/thai-noodles-for-the-beginner-episode-i-all-about-noodles\/#senmee\" target=\"_blank\" rel=\"noopener\">Sen Mee<\/a>, the rice vermicelli as well. Sen Mee will be used in two styles: one is just stir fried in dark soy sauce and oil just like the Sen Yai. Another is the vermicelli that\u2019s \u00a0deep fried dry until the noodles are puffed up and crispy. There is a way to fake that if the young Chinese broccoli isn\u2019t available.<\/p>\n<p>If you have a hard time finding Chinese broccoli, you can use regular broccoli. It would be delicious as well. If you want to make the extraordinary Rad Na, you have to understand that there are two important elements.<\/p>\n<p>First is the noodles. You can\u2019t be stingy or afraid to use oil to stir fry. This is one important element. The noodles will have to be brown and burnt in some spots and have some \u201cblisters\u201d, which are the spots where the noodles touched the hot oil in the hot pan and just fluffed up, trying to get crispy but there is not enough oil to get them that far. The latest studies say it\u2019s better for your arteries than processed vegetable oil. I believe that. Lard will give the best aroma to the noodles.<\/p>\n<p>Second is the gravy, of course. Alright, now you understand the character of the dish, so we\u2019re ready to make it.<\/p>\n<p><strong>Ingredients<\/strong> (for 3 servings):<\/p>\n<p>Meat of your choice: chicken, pork, beef, shrimp or mixed seafood 1 lb. (I used thinly sliced beef from the Asian market, the type they sell for making shabu-shabu)<\/p>\n<p>Light soy sauce \u00a02 tablespoons<\/p>\n<p>Broccoli, either Chinese or regular, cut in pieces \u00a0about 3-4 cups<\/p>\n<p>Chopped garlic \u00a01 tablespoon + 1 teaspoon (1 tablespoon for the gravy and another teaspoons for the noodles<\/p>\n<p>(Optional) Fermented light soy bean \u00a01 tablespoon<\/p>\n<p>Dark sweet soy sauce \u00a02 tablespoons<\/p>\n<p>Oyster sauce \u00a02 tablespoons<\/p>\n<p>Seasoning sauce or Fish sauce \u00a02 tablespoons<\/p>\n<p>White pepper \u00a02 tablespoons<\/p>\n<p>(Optional) Sugar 1 tablespoon<\/p>\n<p>Soup stock or water 3 cups<\/p>\n<p>Corn starch or tapioca starch \u00a03-4 tablespoons<\/p>\n<p>Noodles of your choice, as much as you want. I used big fat rice noodles, about 1\/2 cup of already separated noodles per person.<\/p>\n<p>Dark soy sauce \u00a01 tablespoon<\/p>\n<p>Oil or lard \u00a02-3 tablespoons for the noodles<\/p>\n<p>Oil for the gravy \u00a02 tablespoons<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>1) Marinate the beef with 1 tablespoon of white pepper and 2 tablespoons of light soy sauce. My secret is keeping the inner stems of the broccoli, either the Chinese broccoli or the regular one works fine. I peel the outside, which is the hard part and not chewable, keeping just the white inner core. So I put in the hard part that will take longer time to cook first, following with the part that takes less time to cook.<\/p>\n<p>Then you wait until the soup starts boiling again and add half of the soup stock mixed with starch, stiring the whole time. If you don\u2019t stir, the starch will become lumpy.<\/p>\n<p>Wait until the gravy reaches a rolling boil again to see the consistency. If the gravy doesn\u2019t become thick enough, add more starch mixing a tablespoon in at a time. The gravy will become thick very fast, so be careful with the amount of starch you add.<\/p>\n<p>Always wait until it reach a rolling boil before adding more starch. I served it with fish sauce, sugar, chili in vinegar and dried chili flakes. Of course, white pepper on the side as well. The sunny side up fried egg is optional.
