We are up to episode 18! Did you realize that? Beware that the Thai curry can go beyond hundred episodes and no one can cancel this show. \ud83d\ude09 <a href=\"http:\/\/www.highheelgourmet.com\/2013\/05\/26\/basic-thai-red-curry-paste\/\" target=\"_blank\" rel=\"noopener\">All the basics<\/a>\u00a0and <a href=\"http:\/\/www.highheelgourmet.com\/2013\/09\/15\/advance-authentic-thai-red-curry-paste\/\" target=\"_blank\" rel=\"noopener\">advanced curry pastes<\/a>\u00a0are now covered. \u00a0I left out only a soup that doesn\u2019t use chili in the curry paste, and you probably don\u2019t know of it anyway. The soup is called Kaeng Liang. If anyone really wants the recipe, let me know on my Facebook page and I will provide it. It\u2019s not my favorite soup and one of the ingredients is hard to find, so I can only give the recipe in the summertime.<\/p>\n<p>I can now introduce you to the many different ways of using Thai curry pastes to make many different dishes. Most of the time the Thais will be making their curries using one type of vegetables and one type of meat. This is not a rule, but it\u2019s more like the norm. We don\u2019t put five different vegetables in our curries the way they do here, except in Kaeng Liang or Kaeng Som, which are clearly the Thai mixed vegetable soups.<\/p>\n<p>The typical \u201cred curry\u201d or \u201cgreen curry\u201d in Thai restaurants in the US and the rest of the world are normally packed with at least two or three kinds of vegetables, and also\u00a0not even the type of vegetable that we would use in Thailand either. Frankly, I don\u2019t eat them. I almost never order curry at a restaurant. I like my curry with one kind of vegetable, unlike my salad where I usually mix all the vegetables together.<\/p>\n<p>I think I\u2019m just not used to seeing a coconut milk-based curry with the whole garden in it. It reminds me of pig food, haha. Well, they do feed pigs with leftover food, of course with EVERYTHING is\u00a0mixed together, so it\u2019s unappealing to me. I don\u2019t genuinely think there is anything wrong with that, though, just not very appertizing looking to me, that\u2019s all.<\/p>\n<p>A lot of times people ask me if they can put this and that vegetable in a Thai curry. My answer usually is, \u201cYes, you can.&#8221; The idea of Thai curry is to use whatever meat and vegetable is readily available at hand. You don\u2019t have to go all the way to the Asian market to buy Asian vegetables to put in your curry. You should be able to look in your vegetable drawer in your fridge, and whatever&#8217;s in there should be good enough.<\/p>\n<p>This time I had Thai eggplant left over from the <a href=\"http:\/\/www.highheelgourmet.com\/2015\/05\/22\/authentic-thai-jungle-curry-with-cat-fish-kaeng-pa-pla-dook\/\" target=\"_blank\" rel=\"noopener\">Kaeng Pa<\/a>\u00a0and also some Kaeng Pa curry paste left. I didn\u2019t want to make Kaeng Pa again so I decided to make Pad Phed Gai. Pad Phed is a stir fried curry dish similar to <a href=\"http:\/\/www.highheelgourmet.com\/2014\/01\/18\/pad-prik-khing\/\" target=\"_blank\" rel=\"noopener\">Pad Phrik Khing<\/a>\u00a0but using the Kaeng Pa or Kaeng Phed curry paste instead of Kaeng Kua. Remember the difference I explained to you in the <a href=\"http:\/\/www.highheelgourmet.com\/2013\/09\/15\/advance-authentic-thai-red-curry-paste\/\" target=\"_blank\" rel=\"noopener\">Advance curry paste episode<\/a>? Kaeng Phed has more spice, cumin and coriander added to the <a href=\"http:\/\/www.highheelgourmet.com\/2013\/05\/26\/basic-thai-red-curry-paste\/\" target=\"_blank\" rel=\"noopener\">Kaeng Kua (basic red curry paste)<\/a> curry paste. Kaeng Pa is the same, except Kaeng Pa might have fresh chili in the curry paste and the texture of the curry paste is not fine ground like Kaeng Phed, which is better suited for stir-frying.<\/p>\n<p>If you&#8217;ve ever been to Thailand, you might have eaten a Pad Phed with bamboo shoots and chicken. Pad means stir-fried, Phed means spicy and Gai=Chicken, that simple. This dish is very similar to the most popular Pad Phed, the Pad Phed Gai with Bamboo Shoots, but I had eggplant left over, so I substituted the bamboo shoot with the eggplant.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>Chicken breast meat, cut into thin slices \u00a01 cup<\/p>\n<p>Thai eggplant, also cut into a thin slices \u00a02 cups (After you cut them, soak them in water with salt to preserve the color)<\/p>\n<p><a href=\"http:\/\/www.highheelgourmet.com\/2015\/05\/22\/authentic-thai-jungle-curry-with-cat-fish-kaeng-pa-pla-dook\/\" target=\"_blank\" rel=\"noopener\">Kaeng Pa curry paste<\/a>\u00a02 tablespoons<\/p>\n<p>Fish sauce \u00a02-4 tablespoons<\/p>\n<p>Salt \u00a01\/2 teaspoon<\/p>\n<p>Sugar 1- 1-1\/2 tablespoons<\/p>\n<p>Kaffir lime leaves \u00a03 leaves (<a href=\"http:\/\/www.highheelgourmet.com\/2013\/06\/07\/thai-curry-episode-v-thai-fish-mousse-hor-mok-pla\/\" target=\"_blank\" rel=\"noopener\">This one you can either do it like I did, slice them thinly or just tear the leaves<\/a>)<\/p>\n<p>Fresh Basil 1 cup (You can use Thai basil, or Italian basil if you can\u2019t find the Thai basil)<\/p>\n<p>Oil for frying \u00a02-3 tablespoons (or more)<\/p>\n<p>Milk or water \u00a01\/2 cup<\/p>\n<p><a href=\"http:\/\/www.highheelgourmet.com\/wp-content\/uploads\/2015\/06\/thai-style-chicken-stir-fried-with-curry-paste-and-thai-eggplants-pad-phed-gai-by-the-high-heel-gourmet-1-11.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-5632\" src=\"http:\/\/www.highheelgourmet.com\/wp-content\/uploads\/2015\/06\/thai-style-chicken-stir-fried-with-curry-paste-and-thai-eggplants-pad-phed-gai-by-the-high-heel-gourmet-1-11.jpg?w=788\" alt=\"Thai style Chicken stir-fried with curry paste and Thai Eggplants - I like them semi-soft but other people like them crunchy. Taste test it and adjust to your preference. Just boil the pasta, or if you want to make your own <a href=\"http:\/\/www.highheelgourmet.com\/2012\/10\/06\/oodles-of-noodles\/\" target=\"_blank\" rel=\"noopener\">fresh pasta<\/a>\u00a0you can, just blanch it briefly before you stir fry into the Pad Phed.<\/p>\n<p>You can also add peppercorns if you like.
